Hailing from the town of Akureyri, chef Gunnar Karl Gíslason’s pivotal journey has taken him from his beautiful town at the base of the Eyjafjörður Fjord to Denmark, then New York and ultimately, back home. Fresh and complex Icelandic ingredients, uncompromising sustainability and foraging have been the overarching themes in a brilliant career that has since earned his work the coveted Michelin star.
